Flaxseed extract is derived from the seeds of Linum usitatissimum, a plant of the Linaceae family. Its main components include lignans, flaxseed oil, and flax gum. Lignans are metabolized in the viscera into compounds structurally identical to natural estrogen secreted by the human body. As a green food additive, flax gum can substitute for pectin, agar, gum arabic, alginate and other hydrocolloids. It is applied as thickener, binder, stabilizer, emulsifier and foaming agent, and widely used in food, chemical and pharmaceutical industries. Besides abundant lipids and proteins, flaxseed also contains considerable dietary fiber, minerals, vitamin A, B, D, E, as well as phenolic acids, flavonoids, phytic acid, lecithin and other nutritional constituents.
